When it comes to curry dishes, we have a plethora of varieties to try at home. From paneer, bhindi, baigan, to green bananas, the options are endless. While we love curries with roti and rice both, have you ever thought about how and when the concept of curry came into existence?
As per a reel video by celebrity chef Kunal Kapur shared on Instagram, the oldest curry is almost 4000 year old and it was Baigan Curry, which was made with aubergine, ginger, and turmeric from the share of a bulbous handi (pot).

As per the video, if food historians are to be believed, during the excavations of Harappan civilization in Farmana, Haryana, at the burial sites some earthen pots were found and when these pots were tested at laboratory using starch-grain analysis and residue analysis and it was found that around 4000 year ago, turmeric, ginger, garlic, and brinjal were cooked together in these pots.

In the video, Kunal further says, and because Harappan civilization is closer to modern day Gujarat and Maharashtra, it is safe to say that they used salt in their food. And hence, it can be believed that Baigan Curry is the world's oldest curry preparation.

Ingredients required
250 gms brinjal, salt to taste, 2 tbsp mustard oil, 2 tsp ginger, 4-6 garlic cloves, 1 tsp turmeric powder, and 1 tsp cumin seeds.
Method
Heat oil in a kadhai. Add cumin seeds and let them crackle. In the meantime, make a paste of ginger, turmeric and garlic. Add it to the oil and cook for 2 minutes. Once the oil separates, add washed and sliced brinjals. Add salt, cover and oil for 2 minutes. Add some water and bring it to a boil and cook until the curry slightly thickens. Your simple and easy Baigan Curry is ready. Enjoy!
