  • 2 large sweet potatoes
  • 1 (15 oz) can of chickpeas
  • 2 cups cooked split peas

Instructions

  1. Wash sweet potatoes and poke holes in the potato with fork.
  2. Preheat oven to 400 degrees F.
  3. Bake sweet potato for 45-60 minutes (4 minutes in microwave will speed up process.)
  4. Prepare split peas.
  5. Add 1/2 cup chickpeas, 1/2 cup split peas and other desired topping to sweet potato.
  6. Bake for additional few minutes.
