    1. Step1Preheat a mini waffle iron.
    2. Step2For the original chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese.
    3. Step3Scoop the batter into the waffle iron (using therecommended amount of batter for your specific waffle iron). Close the waffle ironand cook until the automatic light turns green, about3 to4 minutes. Transfer the chafflesto a cooling rack. Serve immediately, or let cool to room temperature and refrigerate for up to 3 days.
    4. Step4For the bacon cheddar chive chaffles: Whisk the eggs together in a medium bowl. Stir in the cheese, bacon, and chives.Cook as directed in Step 3. Top with more crumbled bacon, chives, and cheese, as desired.
