½ teaspoon kosher salt

¼ teaspoon ground black pepper

1 teaspoon freshly chopped thyme

Instructions

  • Preheat oven at 350°F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Place the chicken strips on the baking sheet and heat in oven for 15 minutes or until warm throughout.
  • While the chicken is heating, combine couscous with spinach and beets in a mixing bowl. And in a separate mixing bowl, whisk the olive oil, lemon juice, salt, pepper and thyme. Pour the dressing over the couscous salad and toss until well incorporated. Serve the chicken strips over the salad.
