How To Make Slow Cooker Corned Beef and Cabbage with Red Potatoes, Onion and Carrots

  1. Place onions, corned beef, season packet ingredients, carrots, potatoes, beer and water in slow cooker.
  2. Cook on low for 9 hours.
  3. Add the cabbage and cook on high for 1-1.5 hours.

Can You Overcook Corned Beef In The Crockpot

Yes, you can over cook anything really. But it would take a long time to overcook corned beef in the crockpot. Corned beef can easily cook on low for 10-12 hours without issues. If you cook it longer it will eventually begin to disintegrate.

Crockpot Corned Beef and Cabbage Recipe

This Crockpot Corned Beef and Cabbage Recipe is great because it is easy and low effort. Just toss the ingredients in your slow cooker, set it and forget it. Saint Patrick’s Day dinner will be ready and waiting for you.

Ingredients

  • 3.5 Lb Corned Beef + Spice Packet
  • 1 Sweet Onion, (quartered)
  • 1 Lb Carrots, (cut in half)
  • 2 Lbs Small Red Potatoes, (whole)
  • 1 (12oz) Beer
  • 2-3 Cups Water
  • 1 Green Cabbage, (quartered)

Instructions

  1. Place onions, corned beef, season packet ingredients, carrots, potatoes, beer in large slow cooker. Add enough water to just cover corned beef.
  2. Cook on low for 9 hours.
  3. Add the cabbage and cook on high for 1-1.5 hours.

Notes

For sauce: Mix equal parts stone ground mustard and oil. Add a drizzle of honey and splash of ACV to taste.
