Ingredients

Units

1 2/3 cups frozen mixed vegetables, thawed
1 1/2 cups chicken or turkey, cooked and cubed
1 ( 10 3/4 oz.) can cream of chicken soup
1/4 tsp. thyme, dried
1 cup biscuit mix*
1/2 cup milk
1 egg

Instructions

  1. Preheat oven to 400°.
  2. In a bowl, combine the vegetables, chicken, soup and thyme.
  3. Pour into an ungreased 9-inch pie plate.
  4. Combine the biscuit mix, milk and egg.
  5. Pour over the chicken mixture.
  6. Bake for 25-30 minutes until golden brown.

*For a super easy and quick dish replace the biscuit mix, milk and egg and use canned biscuits or crescent rolls to top the chicken mixture.

    Oooh I already make this myself and it’s delicious. On occasion I’ll even mix together some instant stuffing and put that on top of the filling instead of the biscuit mix. It a good thing for sure.

    This is a great recipe and can be varied in so many ways by the use of different meats, vegetables, and soups. I’ve used a similar recipe with prepared stuffing on the bottom, the meat/vegetables in the middle and mashed potatoes on top. I guess I’m a meat ‘n potatoes kind of girl.:)

      Jon I is hard to say because you need to pick what is really best for your own needs and how you use it. For example I love cast iron because there is something about food cooked in it that is so good but it takes more for clean up and you do have to season it once in awhile plus for me it is usually to heavy to use but I don’t mind seasoning it. But for you being a man the heavy pan would not be a problem but you may hate the clean up and having to season it.

      I have tried most every kind of pan there is and I do like the anodized aluminum ones I have now. Of these I would suggest #4 the Anolon or #6 the Starfrit. I really like the foldable handle on it because I have such little space and he had no negative comments for that one which I was impressed with.
      It was a good article on this type of pan so I would just read the pros and cons and see which ones fit best for you personally. Oh also check the price. I know people think the more expensive the pan the better buy but I don’t always find that to be true so go with what fits in your budget and needs. Hope this helped you some.

    This chicken pot pie recipe is the BEST! I do add more herbs, and use cream of mushroom soup instead of the cream of chicken soup. I also cheat, and use a store-bought, frozen pie crust. :-D It is terrific! Thanks for this recipe! I have your cookbook, and it is wonderful.

    Love your common sense, family-champion approach! Made your white sauce and pot pie-vegan! I just needed the structure and i made vegan, by substitute leftover baked tofu for chicken, leftover baked potatoes cubes and stuffing in top instead of biscuit mix. So good! And it only cost about $4 for entire casserole! Thank you!!!!
