This recipe was first shared on The Recipe Critic.

I’m choosing to ignore the fact that a lot of my American friends have kids going back to school and just plug on enjoying my summer here with these insanely awesome bbq Instant Pot Ribs.

Are we good?

Good.

Ever since these Slow Cooker BBQ Ribs came to be, I’ve been dreaming of one day making a pressure cooker version that is just as amazing.

We all know by now that the Instant Pot can do amazing things:

  • throw some frozen chicken in the Instant Pot and out comes dinner in about 20 minutes
  • Cook an Instant Pot Whole Chicken, then cook some homemade broth, and then some homemade Instant Pot Chicken Noodle Soup, in just a few hours
  • Make true one pot pastas like this Instant Pot Baked Ziti andInstant Pot Chicken Alfredo Pasta.
  • Transform regular old chicken into a sensational meal to rival Olive Garden with these Creamy Italian Instant Pot Chicken Breasts
  • And more!

It’s time to bring on the ribs.

Juicy, always tender, always falling off the bone, no-one-will-even-know-how-you-did-it-if-you-don’t-tell-them kind of ribs. Smothered in your favorite barbecue sauce and finished on the grill, or not.

How to make Instant Pot Ribs:

  1. Remove the membrane from the back of your ribs — check out this video tutorial hereto help you.
  2. Stir together your rub ingredients and liberally rub your ribs all over.
  3. Pour 1 ½ cups of cooking liquid in the bottom of the Instant Pot (I use a 6 quart, but you may need an 8 quart if you have a lot of ribs) and place the trivet inside.
  4. Place your ribs on top of the trivet, curling them around the outside edge of the pot to fit.
  5. Put the lid on and pressure cook until tender and juicy!
  6. Always let the pressure release naturally, then remove and either brush with bbq sauce and serve, or brush with bbq sauce and broil or grill for a few minutes for an authentic smoky flavor.

What are the best ribs to use in this recipe:

This Instant Pot Ribs recipe is for pork ribs and not beef, but you can choose either side ribs or back ribs for this recipe, depending on your preferences.

Side ribs

Side ribs are generally less tender (i.e., less desirable) and therefore less expensive. I often buy side ribs on sale, because with the right cooking techniques you can transform them into something amazing! With the Instant Pot, these ribs are going to be falling off the bone so I wouldn’t worry at all about using side ribs for this recipe.

Baby back ribs

Back ribs (baby back ribs) are more tender and have more meat on them, but they are also more expensive. You will cook both exactly the same, so choose whichever you like.

Perhaps you choose side ribs to enjoy on a regular basis, and upgrade to baby back ribs for a special occasion or when they’re on sale. Or maybe you live for ribs, and you’re going all out with baby back ribs every time! The choice is yours.

Variations on these easy Instant Pot Ribs:

  • Swapping out the cooking liquid is an easy way to totally change the flavor of these ribs: try any clear liquid, soda, broth, beer, cider — get crazy!
  • Bump up the spice or swap out the rub for one of your favorite prepackaged spice mixtures and cut down on prep time
  • Cook them in the Instant Pot, then refrigerate for up to 1 day, then brush with barbecue sauce and grill just until warm — perfect for parties!

The last time I made these they didn’t turn out as tender as I would have thought. I’m thinking of adding a little cook time to them, do you think an extra 10 minutes would be too much?

    • Ashley Fehr says

I don’t think 10 minutes extra will hurt!

These were excellent!! So tender! Can I do two racks of ribs at the same time? Do I need to change the recipe at all to do that?

I am making these for the second time. The first time they turned out to be fantastic. The meat was falling off the bones just trying to get them out. I’m super excited as I’m making 2 racks this time. Thanks for the recipe.

Easy Instant Pot Ribs (baby back or side ribs) - The Recipe Rebel (2024)

FAQs

Why are my ribs tough in Instant Pot? ›

This means that they're not cooked long enough. Be sure to cook the ribs for the full 30 minutes on high, and let the pressure release for 15 minutes before removing the lid. If you did this and the ribs are still tough, I recommend cooking them for an additional 5 minutes on high in the Instant Pot.

How many racks of ribs can you put in an Instant Pot? ›

One rack of baby back ribs fits easily in a 6-quart Instant Pot, and you can also do two racks at the same time though I've never needed to cook that many ribs at once. Just put another rack on the inside of the outer one.

Do side ribs take longer to cook than back ribs? ›

The meat directly adjacent to side ribs (pork belly) is usually made into bacon. Less expensive than back ribs, side ribs have a great flavour, but have proportionately a lower meat to bone ratio, and are less tender, and so need a longer cooking time.

What is the difference between back ribs and side ribs? ›

Meatier than the Back Rib, Spareribs – also known as side ribs - are thick, juicy, and come from the belly section of the pig (where bacon comes from). They usually come with the sternum, costal cartilage and flap still attached. From the Sparerib you can get St. Louis style or Louisiana style ribs.

Is it better to slow cook or pressure cook ribs? ›

Pork ribs take closer to four hours in a slow cooker. Now that it's a little hot to have an oven on all day, I prefer cooking ribs in a multicooker, aka an Instant Pot, and then finishing them under a broiler for three to four minutes to crisp up the edges of the meat.

Can you overcook ribs in a pressure cooker? ›

Cooking ribs in the Instant Pot makes the meat tender, but even in the pressure cooker you can overcook. Don't confuse falling apart dry meat with falling apart juicy meat.

Are side ribs the same as spare ribs? ›

Spareribs. Spareribs (aka side ribs) are the long cuts from the belly behind the shoulder. Racks typically have 11-13 bones and have meat on top of and between the bones. While they have the least amount of meat, a lot of folks think they're the tastiest.

How to cook 4 racks of ribs? ›

If baking more than one rack, give them each their own baking sheet. Cover the ribs tightly with foil then bake for 3-1/2 hours at 250 degrees. If your rack of ribs is larger than 3lbs, add an additional 30 minutes baking time per additional 1/2 — 1lb ribs. For example, bake a 3 — 4lb rack of ribs for 4 hours.

What is the difference between 1 2 rack and full rack ribs? ›

Here are the basics when it comes to a rack of pork ribs: A complete rack of ribs typically weighs about 1 1/2 to 2 pounds and consists of 10 to 13 ribs measuring about 3 to 6 inches long each. A half rack, on the other hand, weighs anywhere between 12 to 16 ounces and has about 5 to 6 ribs on the rack.

Do baby back ribs get more tender the longer they cook? ›

When using a slower method like the grill, smoker, or oven, you'll need about 3-5 hours. Slower methods can be ready in as little as 30 minutes - however, keep in mind that the longer you cook your pork back ribs the more tender and succulent they'll be.

Which has more meat, back ribs or side ribs? ›

Spare ribs are larger, meatier, and contain more bone and fat than baby back ribs. Many people also consider spare ribs to be the most flavorsome. Baby back ribs, on the other hand, are smaller, more curved, and the leanest and most tender of ribs.

Which of the cooking methods is best for back ribs? ›

Cooking baby back ribs in the oven is one of the easiest methods. First, wrap the ribs in tin foil and slow-roast them in the oven on a low temperature between 275 and 325 degrees. Bake until cooked through and tender, usually around 2 to 2.5 hours.

What liquid to add to ribs? ›

You may, if desired, spritz or mop your ribs while smoking with a liquid of your choice. Apple juice or cider, butter, Dr. Pepper, apple cider vinegar, beer… there are plenty of options.

Can you put too much liquid in short ribs? ›

However, if you use too much liquid, you run the risk of diluting flavor and having a runny sauce. Remember, that as the meat is cooking, it will release about a third of its own fats and liquids, thereby adding even more liquid and flavor. Once the meat is finished, a sauce can be made from the braising liquid.

How much liquid do you use to braise short ribs? ›

Return the short ribs to the pan and add 2 cups water or until the water has just about covered the meat. Add the thyme bundle and bay leaves. Cover the pan and place in the preheated oven for 3 hours. Check periodically during the cooking process and add more water, if needed.

How much apple juice to spray on ribs? ›

Pour 1/2 cup of apple juice in each foil pack through opening, seal, and place back on smoker or grill for 1 hour. Remove ribs from foil and place ribs back in smoker and continue to cook until ribs have a slight bend when lifted from one end, 1 to 2 hours more, squirting with apple juice every hour.
