Stick it in the slow cooker with a couple of pints of stock (boiling water and a couple of oxo cubes). Lentils are great if you have some as well. Cook for about 4 hrs. If you prefer it smooth you can then liquidise it.

Did it just veg & stock as suggested , & it was delicious, thanks again. If I were to add lentils next time would this be dried? And just chuck in, or any need to soak first? Thanks from a novice! X

Add some nice vegetable stock to the veg and throw in some mini pasta to make it into a lovely minestrone soup!
I rarely use my slow cooker but on the hob it takes about an hour to cook simmering

Red split lentils won't need to be soaked. Other kinds will. Pearl barley adds a nice bite to make the soup more nutritious and filling. Don't add any salt if using lentils or beans as it can make skin tough. You can add after.

True and they are high fibre, low calorie, lower cholesterol, high protein and better for the planet than meat! I love a lentil and sneak them in everything I can. But we are veggie so I need to get two portions of pulses into my LO every day and lentils are easy to hide!
