Ingredients

For this recipe, I use some pretty basic staple ingredients. Here’s what you’ll need:

  • chicken broth – I recommend a good quality and flavorful bone broth. And homemade is such a great thing to make regularly and keep on hand for recipes. It will really give the soup a great base of flavor!
  • boneless skinless chicken thighs – they add to the flavor and are really tender. You could use bone in chicken, just be sure to discard bones after cooking. Also you could sub the thighs for chicken breasts if you prefer, but they may be a bit drier in texture.
  • onions
  • garlic
  • celery
  • carrots
  • orzo pasta
  • bay leaves
  • italian seasoning – this italian seasoning gives such a great flavor to this soup
  • salt & fresh cracked pepper

Instructions

This recipe is really easy to make and is almost a dump and go kind of soup.

Here’s how you’ll make it step by step:

Add the chopped carrots, celery, onion, garlic, orzo, to the cooking pot of the Ninja Foodi (or instant pot/other electric pressure cooker of choice).

Top with the cut up chicken meat, bay leaves, sprinkle with kosher salt, Italian seasoning, and add 1 1/2 cups of chicken or bone broth.

The rest of the broth will be reserved for later.

Install the pressure lid, make sure to set the release valve to the seal position. Choose the pressure function and set to high.

Set the Foodi timer to 2 minutes and press start to begin. The pressure takes about 10 minutes to build.

When the pressure cooking is complete, allow the pressure vent to natural release for 10 minutes before switching it over to the quick release.

And after the 10 minutes, quick release pressure any remaining pressure by switching the vent release valve to “vent”. And then carefully remove the pressure cooker lid.

How to store leftovers…

If you have leftover soup, it can be stored in an airtight glass container in the refrigerator for up to one week.

To reheat, I would recommend heating on the stovetop in a saucepan over medium heat until warmed through.
