Steaming Times For Christmas Puddings | Ask Nigella.com (2024)

Full question

Hi Guys,I'm making Nigella's Christmas Pudding using the 2.8 litre basin but wanted to know if there was a general rule of thumb for steaming times using smaller pudding basins. I currently have a 1kg and 500g pudding basins that I would like to use but unsure for how long I steam them for. Any help here would be much appreciated.

Our answer

Nigella's Ultimate Christmas Pudding (from CHRISTMAS) benefits from some matuting time, though this can be just 6 weeks ahead. If you are making the pudding further in advance then you may prefer to freeze the pudding until closer to Christmas itself. The recipe stipulates a 1.7 litre (3 pint/7 cups/1.7 quarts) basin and the steaming time is initially 5 hours, followed by 3 hours for the second steaming, before eating (usually on Christmas day).

However the pudding batter is also enough to fill two smaller basins, one of 1.2 litres (2 pints/5 cups) and one of 600ml (1 pint/2 1/2 cups). These should be fairly close in size for the 1kg and 500g basins mantioned. For these basins we suggest steaming initially for 3 hours, and then for a further 3 hours before eating. As steaming is a very gentle form of cooking it is difficult to overcook the puddings, so the same steaming time for both size basins is fine.

How long to steam a Christmas pudding in a steamer? ›

A 1.5 (0.9 litre) pudding will take a shorter tine to cook but unfortunately not half the time of the larger 3 pint (1.5 litre) size. We suggest that you steam the pudding for 4 hours initially then 2 hours before serving, giving a total of 6 hours steaming time.

Why do Christmas puddings take so long to steam? ›

A Christmas pudding is quite a dense mixture and needs long gentle cooking to prevent the outside burning before the inside is cooked. The same theory holds for reheating a pudding as it will take some time for the pudding to heat right through to the centre.

How do you tell if steamed Christmas pudding is cooked? ›

Follow your recipe for the steaming times of your pudding, but if you do need to check then you can insert a skewer through the foil and parchment to check that it comes out clean. Simply patch up the hole with more foil if your pudding needs more time to steam.

According to experts, the secret to Christmas pudding perfection is to heat it to precisely 71 °C. If it gets hotter than 89 °C, the sugars within the fruits in the pudding start to caramelise. So no matter how luxurious its ingredients are, your precious pud will taste bitter.

Why is my steamed pudding not cooked in the middle? ›

If the pudding has a very big dip in the centre then it could be that it was not cooked quite thoroughly enough and this could happen if the water was not kept at a brisk simmer or if the pan was allowed to boil dry at any point.

How do you wrap Christmas pudding before steaming? ›

Brush the parchment with melted butter to stop it sticking. Fold a pleat in the centre of the foil and parchment to give the pudding room to expand as it cooks. Tie the foil onto the basin with string; wrap it twice to keep it tight. Use the remaining string to create a handle over the top of the pudding.
