If you’re not living under a rock, you’ve probably watched Ted Lasso. And if you’ve watched Ted Lasso, you’ve probably seen Ted gift Rebecca homemade biscuits in the iconic pink box. AND if you’re like me, you’ve been dying to sink your teeth into one of those buttery, shortbread bars ever since it graced your television screen. So without further adieu, let me present the Ted Lasso Biscuit Recipe.

Or at least what I imagine it would be.

Where does Ted Lasso get the biscuits he gives Rebecca?

If you’ve watched the show, you’ll know that Ted brings Rebecca in a cute pink box of biscuits every morning and she’s desperate to find out what bakery he’s purchasing them at. Of course, *spoiler alert* we later find out that Ted is baking them himself (which is quite sweet). And while it might seem like it would take him a long time to make her biscuits every day, these bars are actually quite easy to make.

These buttery biscuits come together in minutes and keep for weeks, meaning you can whip up a big batch on a whim and have sweet treats for weeks. I’m sure Ted makes a big old batch and then brings them to Rebecca for the following weeks. Or at least that’s what I would do because I’m lazy.

What ingredients do you need to make Rebecca’s favorite biscuits?

The best part about homemade biscuits is that they come together in a pinch with super simple, staple ingredients, so you can whip them up on a whim.

  • Butter: The base of any good shortbread biscuit is some good buttahhh, so make sure you splurge on the good stuff. We love Vermont Creamery, but any high quality butter will do the trick!
  • Sugar: These biscuits aren’t super sweet, but they do require a little sugar to create just the right amount of caramelization and chew. we use granulated sugar in the biscuits and then a golden or raw sugar on top to give them the classic sugary top that Ted’s biscuits have!
  • Flour: You’ll want to use all purpose flour for the perfect crumb to your shortbread bars. I’ve also had success making these with a gluten free 1:1 baking flour!
  • Vanilla Extract + Almond Extract:A combination of vanilla and just a little bit of almond will make these biscuits taste straight out of a bakery!
  • Salt: You’ll only need a little bit, but salt is so important to deepening the flavor. It will cut the sweetness just enough and make these shortbread bars seriously addicting.

How to store the Ted Lasso biscuits so they stay soft for dayyyyys (not that they’ll last that long)

Shortbread is one of those magical cookies that keep incredibly well. They’re pretty sturdy, and will stay tender and soft for up to 3 weeks as long as they’re stored in a sealed container. So they’re perfect for sharing or shipping to friends. But I won’t tell anyone if you don’t share a single one of these with anyone else. Our little secret 🙂

Ingredients

  • 2 cups all purpose flour
  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup unsalted butter, cold and cut into cubes
  • coarse sugar, for topping (optional)

Instructions

    1. Preheat the oven to 350°F and line an 8 x 8-inch pan with parchment on all sides. Set aside.
    2. In a food processor combine the flour, sugar, salt, vanilla, almond, and butter. Pulse until just combined and the mixture starts to form a dough around the blades of the food processor.
    3. Press the dough into the prepared pan, using your hands to spread the dough into an even layer.
    4. Sprinkle the tops of the bars generously with coarse sugar.
    5. Bake at 350°F for 35 to 40 minutes or until just light golden brown. Take out of the oven and allow the bars to cool completely before slicing the bars into your desired size! Enjoy!
