Cooking filet on Blackstone is one my favorite ways to cook my favorite cut of meat. I usually get a Filet Mignon when I go to a steak house, but since getting a Blackstone I have been able to cook it perfectly on the griddle.

This restaurant quality meat cooks easily on the griddle surface and the steak comes out tender and juicy. We love the large cooking space so I can cook multiple things at once. The high heat cooks the filet mignon quickly and which locks in the moisture.

Simple seasoning are added to the filet mignon to enhance the flavor. Add your favorite side dishes and you have a complete meal.

Ingredients:

  • Thick Tenderloin Beef Filets (approximately 2 inches thick)
  • Kosher Salt
  • Pepper
  • Garlic Powder
  • Oil (with a high smoke point)
  • Butter

How to Cook Filet Mignon on Blackstone Griddle:

  • Step 1 – Heat Griddle – Preheat the Blackstone griddle over high heat (approximately 450 degrees F). You want the griddle to be hot to get a good sear on the steaks.
  • Step 2 – Room Temperature Steaks – Make sure that the steaks are dry and are at room temperature.The steaks need to dry with paper towels.
  • Step 3 – Combine Seasoning – Combine the garlic powder, salt and pepper together in a small bowl. Then season the steaks with the seasoning mixture.

  • Step 4 – Oil the griddle – Spread the oil out onto the Blackstone grill with a spatula.

  • Step 5 – Cook Steaks – Place the steak on a Blackstone. Let them cook for approximately 2-3 minutes with the lid closed and do not move them to get a good sear on the steaks.

  • Step 6 – Flip Steaks – Then use tongs to gently lift and flip the steak. If the steaks are still sticking to the grill, this means that they need more time and they are not ready to flip yet.

  • Step 7 – Continue to Cook Steaks – Flip the steaks onto a separate section of the grill. Then cook the steaks for 2-3 more minutes to reverse sear the opposite side of the steaks.
  • Step 8 – Brown both sides – To brown the sides of the steak, hold the steaks onto the grill with tongs and cook for 1-2 minutes per side to brown the sides of the steak.
  • Step 9 – Continue Cooking – Then reduce the temperature on the Blackstone grill to medium heat. Cook the steak until they are done to your preference.
  • Step 10 – Check Temperature – Use an instant read meat thermometer to check the steak temperature. The recipe notes have the internal temperature for each steak preference.
  • Step 11 – Top with Butter – Then top each steak with approximately ½ Tbsp of butter and let the butter melt into the steak.

  • Step 12 – Serve & Enjoy – Remove the steaks from the grill. Let the steak rest for 10 minutes and then they are ready to serve warm and then enjoy.

How Long to Cook Filet Mignon on Blackstone:

Blackstone griddle steaks cook quickly on the large cooking surface. To give the steaks a nice sear, allow the cook for about 2 to 3 minutes on each side on direct heat.

Use tongs to brown all sides of the filet mignon and the move to lower heat griddle to continue cooking.

No matter the cut of steaks, these steps will help you get the perfect cooked steak. You can even use these guidelines for New York Strips.

How to Know when Steak is done:

The best way to test for doneness is by inserting an instant read thermometer into the thickest part of the steak. Do this through the side, not the top of the steak.

Steak Doneness:

  • Rare – 120F, cool to warm red center
  • Medium Rare – 130F, Warm red center
  • Medium – 140F, Hot pink center
  • Well Medium – 150F, Mostly brown center
  • Well Done – 160F, full brown in color

How to Cook Filet Mignon on Stove Top:

Cooking a Filet Mignon is an easy way to cook your favorite cut of meat. We recommend to cook in a hot skillet. We like to use a cast iron skillet but any skillet will work. Cooking in a cast iron skillet is similar to cook on a Blackstone Griddle or a Gas Grill.

We still recommend pan searing the steak in skillet over high heat and cooking all sides. Then turn the stove top to low heat and continue cooking until the temperature you prefer.

  • Sear Steaks – Allow the steaks to sear on the griddle. Cook all sides of the steak to ensure it cooks evenly.
  • Rest Steaks – Once the steak is cook, allow them to rest before cutting into it. This helps to lock in the juice giving the steaks so much flavor.
