Easy Cucumber Dill Salad is a great summer side dish featuring English cucumbers, fresh dill, sour cream, sugar and vinegar.
I remember one summer as a kid where my mom grew cucumbers. There were so many that we had no idea what to do with them all. I'm pretty sure that we ate this cucumber salad for dinner at least three nights a week for the entire summer.

What is easy cucumber dill salad?
Cucumber dill salad is a great side dish for just about any meal. Serve it up with grilled burgers, fried chicken or even a baked fish. The salad is made using English cucumbers (no seeds), fresh dill, sour cream, sugar, vinegar, salt and pepper.

Ingredients
- English cucumber
- sour cream
- sugar
- white vinegar
- dill (fresh preferred, but dried will do)
- salt and pepper
Instructions
First, prepare the cucumber. Thinly slice the cucumber into rounds. Optionally, you can peel the cucumber first, but I tend not to with English cucumbers because the skin is already thin.

Then add the cucumber to the bowl. Add cucumber slices to a large bowl and liberally sprinkle with salt. This enhances the flavor of the cucumbers.
Next, stir in the remanining ingredients. Add the sour cream, white vinegar, sugar, salt and pepper and stir, folding in the cucumber until coated. Then add in the dill and stir again.

After that, refrigerate the salad. Cover the salad and chill in the fridge for a few hours. This isn't necessary, but when left to sit, the flavors better develop. Add additional salt and pepper to taste.
Finally, serve the salad. Spoon salad onto plate and garnish with additional dill if desired.

Substitutions and Additions
- Dried dill (either in the spice aisle, or the freeze-dried kind in the produce section) can replace fresh dill
- Parsley is another great herb to add to this summer salad

- Apple cider vinegar can replace white vinegar in this recipe
- Onion - red or white, can be thinly sliced and added if desired
- Plain Greek yogurt can replace sour cream

Why is my cucumber salad frothy?
This happens when the cucumbers release the moisture within them. It's completely normal and doesn't change the taste of the salad. Stir the salad, and if desired, add in more sour cream to thicken it up.
How do I fix cucumber salad that is too thick?
If you've already let the salad sit in the fridge and it hasn't thickened up yet, add a little water to the salad and stir until fully combined.
Why do you salt cucumbers?
Salt brings out the natural flavor of the cucumbers. Although this step is brief in the recipe, you can salt the cucumbers and let them sit for 15-20 minutes before continuing with the remaining steps to further enhance the flavor of this cucumber dill salad.

Ingredients
- 1 large English cucumber
- 1 tablespoon salt
- ½ cup sour cream
- 2 tablespoon white vinegar
- 2 teaspoon sugar
- 1 teaspoon pepper

Instructions
Thinly slice the cucumber into rounds and place in a large bowl. Season liberally with the salt.

Refrigerate the salad for 15 minutes (or longer), then stir again and taste, adding additional vinegar, sugar, salt and pepper as needed.
