How to decorate biscuits with fondant icing (2024)

If you've long admired the type of brightly coloured and decorated biscuits made by the professionals, then read on. By discovering how to ice your own biscuits with fondant icing you can soon be making art-inspired creations of your own.

Start with the right biscuit

The foundation of every great biscuit is the recipe you choose. Choose a sugar biscuit or vanilla biscuit recipe that is designed for cutting. Roll the biscuit dough evenly and use your choice of biscuit cutters to cut out the designs. Allow the biscuits to thoroughly cool, preferably overnight, before decorating.

Cut out your fondant

Roll out your fondant and use the same biscuit cutter as you used for the base biscuits to cut out shapes in the fondant. Choose all, or part of the cut out icing to cover the biscuit.

Attaching the icing

Lightly brush the icing with water. This will allow the icing to adhere to the biscuit. Carefully lay the icing onto the biscuit and use your finger to gently round out any rough edges.

Add any embellishments

Use royal icing to pipe any final details onto the biscuit, or to attach any embellishments. Have fun with the designs, using a variety of different coloured fondants, edible glitter and embellishments and enjoy creating your own masterpieces.
