Hey guys!
Happy Holidays! 🎄 I hope everyone is enjoying the holiday season. We've been watching Christmas movies and doing plenty of baking at my house. My son is so weird, he loves to help me make the cookies but he won't eat them. I'd kill for that strength. Anyway, this year while watching How The Grinch Stole Christmas my hubby challenged me to make the Roast Beast from the Jim Carrey movie version.

If you haven't seen this movie it looks like a giant turkey with extra legs. So, of course, why wouldn't I make this! It was surprisingly easy to make and we had a good laugh over the whole thing. You only really need a good sized turkey, extra chicken legs with some cotton string and kabob skewers.



Ingredients-

Turkey
Chicken Legs
Salt
Pepper
Butter
Onion
Lemon
Fresh Thyme or Rosemary
Dried Thyme

Decoration-

Pineapple Rings
Maraschino Cherries
Peppercorns

Tools-

Roasting Pan
Kabob Skewers
Cotton String/Baking Twine
Toothpicks
Knife
Scissors
Paper Towels

Directions-

First, pat dry the turkey with paper towels.

Use a sharp knife to remove the wings. I cut the skin around to find the joint and removed the wings.

Salt and pepper both inside and outside of the turkey.

Stuff the turkey if desired. You don't have to stuff it but I usually do to mine. I like to use onion, lemon, and fresh thyme to help keep the bird moist. I've also used apples, oranges, and rosemary.

To add the legs stab the skewers into the breast around where the wings were and push the skewers through the chicken legs.

For the "middle" legs, use the cotton string to tie the turkey legs into an upright position. We want all our legs pointing up.

Then add the last 2 skewers at the bottom behind the turkey legs and add the chicken legs like before.

Rub your roast beast down with butter and dried thyme.

Bake the beast according to your turkeys recommended baking time.

Done! To make ours look more like the movie we decorated with pineapple rings and maraschino cherries held in place with toothpicks. Then we poked black peppercorns into the pineapple rings and added turkey booties to the feet.

This was so fun to make and it's nice to have the extra legs for those who like dark meat. I hope you try this for your holiday dinner. See ya later and Merry Christmas.
